The Wines

A fine balance of nature, science, and art.

We are passionate about a simple philosophy: exceptional wines are made from exceptional fruit with exceptional care. This is why we celebrate the characteristics of, and stories behind, each unique vineyard block, allowing the fruit to express itself and encouraging the personality and terroir of the vineyards. The combination of skills and expertise, in both the vineyard and the cellar, allows us to create the harmony of nature, science, and art in every bottle of PV365 wine.

2021 Sauvignon Blanc

Napa Valley

Opening with aromatic notes of lemon zest, nectarine, and fresh melon, this ’21 white wine is yet another example of Sauvignon Blanc’s potential for great complexity. As it aerates in the glass, a range of flavors, from pineapple and melon to lychee and key lime, begins to emerge. The citrus component of its core aroma and flavor is particularly apparent in this vintage: there’s a lightness and crispness to the wine, along with an elegant balance of ripe fruit and firm acidity through its long, concentrated finish.

2020 Sauvignon Blanc

Napa Valley

This single-vineyard white wine is a textbook example of how bright and expressive Sauvignon Blanc fruit can be rendered in the hands of a winemaker like Patrick Saboe. He chooses to emphasize the variety’s freshness and high acidity through his vinification methods, which lend transparency and help highlight secondary characteristics of roundness and polish on the palate. The nose is fruit and mineral-driven, with notes of nectarine, wet stones, and citrus. Flavors range from Meyer lemon to more tropical pineapple and mango through the long,  concentrated finish. This is a vibrant and complex Sauvignon Blanc.

2019 Brut Rosé

Napa Valley

Displaying a bright, salmon color in the glass, the 2019 Brut Rosé shows great levels of concentration and depth—lovely contrasts to the elegant pink of its hue. Patrick describes the wine as having fresh, red fruit aromas and a juicy palate of complex cherry, cassis, and blackberry flavors. Through its long, creamy finish, it displays a balancing acidity that works in seamless tandem with the wine’s inherent effervescence. All aspects of this debut, sparkling wine bottling are cause for celebration!

2021 "So Be It" Riesling

Clarksburg

With our inaugural release of “So Be It” Riesling, we Celebrate Life and the Power of Friendship of our dear friend and colleague, Mike Keilty. Riesling was Mike’s favorite varietal, “SO BE IT” was inspired by his adventurous spirit, humor, generosity and dedication to his family and friends. Forever in our hearts, keeping memories alive!

Right out of the bottle, enticing aromas of fresh citrus and ripe stone fruit are immediately present. There’s an underlying mineral note on the nose, a wet stone characteristic that carries through on the fresh, zippy palate. More stone fruit emerges in the range of complex flavors, with juicy nectarine and apricot balanced by a crisp, mineral-driven acidity. A hint of orange peel on the long finish adds yet more complexity to this ’21 Riesling

2019 "Sajana" Red Wine

Napa Valley

Initial aromatic notes of black fruit lead to an earthy nose of tobacco, along with a touch of anise as the wine opens up in the glass. The flavors of this medium-to-full-bodied wine start out juicy and red fruit-forward on the palate. After some aeration, it develops spicy, secondary flavors of blackberry and toasted vanilla, all wrapped in a package of smooth tannins. With such a lush mouthfeel, the wine is ready for immediate enjoyment, though we have no doubt that this debut bottling will also reward patient cellaring.

2018 Cabernet Franc

Napa Valley

The lush, ample fruit harvested in 2018 has translated to an approachable,  but still very powerful, Cabernet Franc. Aromatic notes of blue and red fruit, violets, and black tea mingle in the glass, along with a touch of caramel from barrel aging. The juicy, expansive palate is defined by Cab Franc’s classic blueberry and red currant flavors, framed by polished grape tannins and some sweet, toffee-like oak tannin. This wine is a gorgeous, fruit-forward bottling—an example of intense, but balanced, Cab Franc that can be enjoyed immediately.

2017 Cabernet Franc

Napa Valley

More fruit-forward and approachable in its youth, yet just as cellar-worthy, Cabernet Franc can represent a stylistic departure from the full-bodied, muscular red wines so closely associated with Napa Valley. Our 2017 Cab Franc is no exception: produced from grapes grown in the stunning Stagecoach Vineyard on Atlas Peak, the wine is high-toned, medium-bodied, and quite complex. Redolent of berries, dark chocolate, and tobacco, it possesses tannin structure and ample acidity, components that ensure ageability.

2018 Cabernet Sauvignon

Napa Valley

The best Napa Valley Cabernet Sauvignons offer consistent flavors and aromas, but depending on where they grow in the Valley, vines can work in different ways. With our 2018 Cabernet, crafted from the exquisite J Squared Vineyard in the Coombsville AVA of southeast Napa, fruit tends to ripen late in the growing season. This additional hangtime gives rich flavors of cherries and plums, bright acidity, and fully developed tannins. Our resulting ’18 is approachable at this early stage of its life, but the wine’s firm structure suggests years of cellar potential.
